Welcome to Fireside Feasts, where we honor the culinary traditions of Trinidad and Tobago by preparing every dish the old-fashioned way—over a clay fireside and in traditional clay ovens. This time-honored cooking method imparts a unique smoky depth and rich flavor to our food that is simply impossible to replicate with modern techniques. We are dedicated to providing a catering experience that is not just a meal, but a genuine taste of our cultural heritage.

Our Menu: A Culinary Journey of Tradition

Appetizers:

  • Saltfish Buljol: A classic breakfast staple of flaked saltfish, sautéed with onions, bell peppers, tomatoes, and herbs.
  • Roast Baigan Choka: Smoky roasted eggplant, mashed with garlic, onions, and local peppers.
  • Roast Tomato Choka: Fire-roasted tomatoes mashed with garlic and chadon beni (culantro) for a fresh, vibrant flavor.
  • Fried Accra: Savory fritters made from a seasoned flour batter with saltfish, deep-fried until golden and crispy.
  • Black Pudding: A local delicacy of spicy rice pudding made with pork blood and herbs, served fried.
  • Fried Plantain: Sweet and savory slices of ripe plantain, fried to perfection.

Main Courses:

  • Bake and Shark: A Trini street food classic! Deep-fried shark fillet in a golden fried “bake” (bread), with fresh vegetables and a choice of sauces.
  • Souse: A tangy, zesty dish of boiled pig’s feet, seasoned with cucumber, lime, hot pepper, and chadon beni.
  • Oil Down: A rich, savory one-pot dish of salted meat, breadfruit, dasheen, and other vegetables simmered in coconut milk and spices.
  • Curry Crab & Dumplings: A Tobago-style classic. Fresh crab slow-cooked in a rich curry sauce, served with soft, chewy flour dumplings.
  • Dasheen Bush Callaloo: A creamy, herby stew of dasheen leaves, okra, coconut milk, and crab or pigtail.
  • Geera Pork: Tender pieces of pork, sautéed with a generous amount of toasted and ground cumin (geera) and other spices.
  • Stew Pork: Chunks of tender pork, simmered in a dark, rich, and savory caramelized brown sugar sauce with aromatic spices.
  • Stew Chicken: A beloved Trini staple. Tender pieces of chicken simmered in a dark, rich, and savory caramelized brown sugar sauce with aromatic spices.
  • Pelau: A savory one-pot rice dish with chicken or beef, pigeon peas, and coconut milk, a true staple.
  • Curry Duck: A local delicacy. Tender pieces of duck, slow-cooked in a spicy and aromatic curry.
  • Curry Goat: Succulent pieces of goat meat, slow-simmered in a rich curry sauce until tender.

  • Hops Bread: Soft, slightly sweet, and fluffy yeast rolls, perfect for sandwiches or with choka.
  • Coconut Bake: A dense, sweet bread made with freshly grated coconut, best served warm.

  • Minimum Order: A minimum order of 10 servings per item applies to ensure the quality and scale of our traditional cooking methods.
  • Payment: A deposit of 50% is required at the time of booking to secure your order. The remaining balance is due upon pickup or delivery.
